Roasted Sweet Potato and Rosemary Soup

(Recipe from Breville)

Ingredients

250 grams sweet potato (camote)

1 carrot

1 white onion, sliced

3 garlic cloves, minced

2 cups chicken stock

1 tsp sea salt

0.3 tsp dried ginger, ground

1 fresh rosemary sprig

4 tbsp olive oil

Garnish

1 tbsp cooking cream

1 tbsp mixed nuts (cashew, almond, peanut)

1 tsp olive oil

Procedure:

Preheat a Breville Smart Oven Air Fryer to 175 degrees centigrade.

In a baking rack, place the diced sweet potatoes and carrots and drizzle with 2 tbsp of olive oil.

Roast for 12 minutes under 175 * C.

In a preheated pan, drizzle olive oil and sauté minced onions for two minutes under low heat.

Add minced garlic, salt, and ground ginger, then sauté for another three minutes.

Once the sweet potatoes are cooked, transfer it into the pan with sautéed garlic and onions.

Add the chicken stock into the pan and simmer for 5 minutes.

Transfer everything into the Breville blender, and process until smooth.

To assemble: Transfer the soup into a bowl and garnish it with chopped mixed nuts, fresh rosemary leaves and drizzle with cooking cream and remaining olive oil.
